Housed in the Fairmont, the Garrison is one of the best fine dining experiences we’ve had in Austin. We ordered the grilled oysters, red snapper crudo, and crispy octopus to start. The snapper came soaked in a delectably tart citrus sauce that complemented the perfectly crisped octopus’ cream based amaranth flavor. For our main, we had the strip loin (medium rare) and grilled Texas redfish. Both arrived plated beautifully and rich with complex flavor in the sauces that made them unforgettable. The strip loin goes exceptionally well with a glass of the full bodied Austin Hope’s fruity bouquet. Please. order. the. tater. tots!!! This side dish is so amazing, it should really be a main!! It comes plated as a large cube of golden crusted potato, which is actually an assembly of smaller precut cubes covered thickly in aerated Gruyère cheese and an abundance of shaved black truffles. Wow. They literally melt in your mouth!! The grilled mushrooms went so well with it as a side with its aromatic garlic xo flavor and fluffy texture adding a punch between bites of the tots. We hardly had room for dessert, but the apple crisp was so light and refreshing that it felt like we automatically developed a second compartment in our stomachs just for it!! Last but not least, Antonio and Bryan both saw to it that we were tended to every step of the way throughout our dining experience. We couldn’t have been more pampered!! Thank you so much for giving us such a beautiful start to 2025!!

Photos don’t do this place justice; it looks much better in reality. Starting with the fact that it’s a building inside a building, with a fake colonial façade, it’s quite spectacular. The food is also much more upscale than I expected: they serve amuse-bouches, including a wagyu crackling, and the steak comes pre-sliced with sauce and all. Definitely not cheap, even by London standards, but worth it nevertheless.

We had dinner at Garrison in the Fairmont Hotel after a full week... we decided we needed a great meal. Garrison delivered! Cool-blue ambiance was almost mesmerizing! Start to finish, the meal was excellent, with one slight observation noted below... JR was our server, and he did a great job. Attentive, but not intrusive. Great job leading us through the menu and especially the specialty cocktail selections. Thanks JR, job well done! Our dining "fantasy come true" experience began with cocktails... the Garrison Dirty Martini and a Belvedere Vodka Shot with caviar! Check out the pics, amazing presentation for both. The martini served in a chilled test tube on ice, with castelvetrano olives on a party stick in the glass. The vodka shot with a balanced mother of pearl spoon full of caviar on the top. Great fun, and delicious too! The meal began with a compressed melon amuse-bouche... light and delicious. We had the crispy octopus as an appetizer, and the picanha (steak) and pan roasted grouper as entrees. Both were terrific! One suggestion for the kitchen is to hold off on adding salt to the steak a second time after it is cut, the original salt in the rub on the outside of the steak is enough (for our palates anyway! We know some prefer more salt!). The gruyere black truffle tater tots are to die for...!!! The ordered a bottle of French Chablis to accompany dinner, and it was delightful. The Garrison wine list is a dizzying walk through all varietals, Old and New Worlds, and lots of other stuff tossed in. Any wine buff can find a bottle here, and generally reasonably priced for a downtown lux hotel. Dessert brought another treat... after much thought, we selected the chocolate passion fruit dessert, which was kind of a deconstructed s'mores with passion fruit sorbet on crushed graham crackers on the side. Small mints and jellies ended the evening... Great experience at Garrison! As the listing suggests, $$$$ means expensive. IMHO, worth every penny. Highly recommend Garrison...

10/10 no notes on this place. The service the atmosphere and of course the food were all spectacular. I highly recommend the rib eye and the porterhouse especially with a larger group. The tater tots and the caviar were also fantastic additions to an already great meal. I’ll be dreaming about this meal for years to come….

Might be the best food I've experienced in Austin. Everything was carefully prepared down to the smallest detail. The staff was very knowledgeable about the dishes and helped us combine them with nice drinks. Jasper, who took care of us, was nice and friendly, and afterwards the manager, Chris, came and found out all the details of our day and chatted with us about the foods we tasted. I thank them so much for making our day go so well.

It’s great when go somewhere and just hope it all falls into place. Exactly what happened. My wife is celebrating a milestone birthday. David takes pride in his work and his recommendations will make tonight unforgettable. The food was amazing - 10, the service was beyond - 11.
