Copper River Restaurant & Bar

I recently visited Copper River in Hillsboro for a Sunday lunch, and overall, it was a great experience. From the moment we walked in, the staff was friendly and welcoming, greeting us as we entered. The restaurant was clean and well-maintained, and since they weren’t too busy, we were seated very quickly. Our server, Shannon, was excellent—she promptly got our drinks, gave us the time we needed to order, and was happy to answer any questions we had. I wasn’t too hungry, so I ordered a chicken salad, which turned out to be flavorful and well-prepared. My cousin opted for the steak salad and was also very satisfied with their meal. The restaurant has a large bar area, which looked like a nice spot to grab a drink, though I wasn’t drinking this time since it was lunch. The overall atmosphere was comfortable and inviting, making it a great spot for a casual meal. If you’re looking for a pleasant dining experience with friendly service, good food, and a welcoming environment, Copper River is worth a visit!

It's a very nicely decorated Hillsboro restaurant that has an awesome happy hour. Service is friendly and quick, drinks are stiff, and best that food is pretty great. Only thing I didn't like is the chicken where it is eat too salty.

Always looking for a new place to try. We saw this place, and I love seafood so we went. I had the stuffed salmon, it was delicious! The salmon is cooked just right, moist and tasty. I even love the grilled asparagus. My hubby had the chicken pot pie, he loves it! We'll definitely come back when we're around this area. Maybe, I'll try the prawns next time.

No one in a party of 22 liked their food enough to ever go back. The food is plated nice but not that tasty. The French dip meat is very salty and the dipping sauce is even more salty. The pot pies have a nice looking crust but it has no flavor and there is just a scoop of the filling mostly air inside the pie. For the fish and chips the battered fish were fine but the fries were a soggy grease pile. They offer a wide variety of plates from kung pao chicken to fish and chips. None of which they really do good, at least we have not found anything good. They have a wide variety of adult beverages which is nice and is probably the better reason to go here.

I opted for a house salad with Ranch dressing and the Cabernet beef tips paired with mashed potatoes. Both dishes were fantastic! If you’re in the mood for something savory and comforting, you can’t go wrong with the beef tips!

Great cocktails, food, and prices! They quickly sat our party of 7 without a reservation. We all shared our dishes and tried the sliders, steak, mashed potatoes, corn fritters, fried chicken, french fries and several drinks. Everything was delicious.
